Ingredients
For the Slow Cooker Turkey and Stuffing:
⅔cupturkey brothor chicken broth or chicken stock
2 -3poundturkey breast
2tablespoonspoultry seasoning
½teaspoonsalt
½teaspoonpepper
1loaf French breadcubed (1/2-inch cubes) and dried
2stalks celerydiced
1sweet oniondiced
½cupdried cranberries
¼cupsalted buttermelted
1TablespoonItalian seasoning
1teaspoonground sage
½teaspoonfresh thymeminced
Chopped fresh parsley for garnishoptional
Slow cooker lineroptional for easier clean up
For the Gravy:
½cup1 stick salted butter
½Tablespoonroasted garlicminced
⅓cupall purpose flour
2cupsturkey broth
1teaspoonpoultry seasoning
1teaspoonWorcestershire sauce
½teaspoonfresh thymefinely minced
½teaspoonblack pepper
Instructions
For the Turkey and Stuffing:
Add your broth. Pour your turkey broth into an 8-quart crockpot and set aside.
Seasoning the turkey. Season both sides of your turkey breast with salt, pepper, and poultry seasoning and nestle the turkey into the broth.
Make the stuffing. In a large bowl, mix the cubed French loaf, celery, onion, cranberries, butter, Italian seasoning, sage, and thyme and toss well to coat the bread cubes.
Cook. Add the stuffing mix around the edges and over the turkey breast, cover and cook on high for 3 hours or low for 6 hours. Use a meat thermometer to check that the thickest part of the turkey breast reads 165°F before removing it to a serving platter.
For the gravy:
Melt your butter. In a saucepan over medium heat, melt the butter, and garlic cooking until fragrant and the butter is fully melted.
Make a roux. Add the flour into the butter slowly whisking for 1 minute, until no lumps remain.
Flavor your gravy. Whisking continuously, add the turkey broth, poultry seasoning, Worcestershire sauce, thyme and pepper. Bring to a simmer and cook, stirring occasionally for 5 minutes or until thickened enough to coat the back of a spoon.
Serve immediately.
Notes
Using cornbread stuffing mix is a favorite way to make this recipe easier. Use 1-2 boxes according to the package instructions and layer around the turkey as we did with the homemade stuffing mix.
