Ingredients
Shrimp Kabobs
2poundsraw shrimppeeled and deveined
2mangosfirm (can also use frozen mango chunks)
2avocadosfirm- not super squishy
1/2red onioncut into square cubes
Shrimp Scampi Butter
2tablespoonschile lime salt or barbecue rub
2sticks buttermelted
1tablespoonfresh garlic
2green onionssliced thin
Instructions
Thread shrimp, avocado, mango, and red onion onto skewers. Refrigerate.
In a glass measuring cup microwave the butter until melted. Add garlic, Twang salt, and green onion. Stir gently to combine.
Pour over the skewers soaking them. You may sprinkle extra chile lime salt if preffered. You may proceed to grilling or refrigerate until you are ready to grill.
Grill 2-3 minutes per side, rotating as needed. Remove and serve with your favorite sides.
