To assemble these vibrant Shrimp Scampi Kabobs, start by prepping your skewers with a colorful mix of ingredients. Thread one raw shrimp, followed by a cube of firm mango, a chunk of creamy avocado, and a square of red onion—then repeat until the skewer is full, leaving a little space on each end for easy flipping on the grill.
The combination of sweet mango, rich avocado, and zesty red onion makes each bite pop with flavor. Once all your skewers are assembled, place them in a shallow dish or tray and prepare the scampi butter.

Making The Scampi Butter Using Chile Lime Salt
We use popular chile lime rubs and salts for this recipe to create a dry rub and garlic butter that is grill and barbecue friendly as well as tart and delicious. I used Twang's Chile Lime Salt and it was the perfect spicy-tart combination.
Melt the butter in a glass measuring cup (microwave works perfect for this)and stir in the fresh garlic, chile lime salt, and green onion.
Pour the warm butter mixture over the skewers, ensuring each one is generously coated. You can grill them right away or cover and refrigerate the kabobs until you’re ready to fire up the grill.
How to Grill Shrimp Kabobs
To grill the Shrimp Scampi Kabobs, preheat your grill to medium-high heat and place the skewers directly over the flame; cook for 2–3 minutes per side, turning as needed, until the shrimp are pink, opaque, and slightly charred at the edges—then remove and serve immediately.

Ingredients
Shrimp Kabobs
- 2 pounds raw shrimp peeled and deveined
- 2 mangos firm (can also use frozen mango chunks)
- 2 avocados firm- not super squishy
- 1/2 red onion cut into square cubes
Shrimp Scampi Butter
- 2 tablespoons chile lime salt or barbecue rub
- 2 sticks butter melted
- 1 tablespoon fresh garlic
- 2 green onions sliced thin
Instructions
- Thread shrimp, avocado, mango, and red onion onto skewers. Refrigerate.
- In a glass measuring cup microwave the butter until melted. Add garlic, Twang salt, and green onion. Stir gently to combine.
- Pour over the skewers soaking them. You may sprinkle extra chile lime salt if preffered. You may proceed to grilling or refrigerate until you are ready to grill.
- Grill 2-3 minutes per side, rotating as needed. Remove and serve with your favorite sides.
