In a large stockpot with 1 gallon of water, add 1/2 c. kosher salt and 1 3 oz. Zatarain's shrimp boil. Split a lemon and squeeze all its juice into the saucepan.

Bring the poaching liquid to a boil. Simmer the spice bag for about 15-20 minutes to flavor the broth.

Reduce broth to a simmer. Use a thermometer to verify that the poaching liquid is 160–180 degrees or watch for tiny bubbles.
