Texas Cowboy Caviar Recipe

Texas Caviar is a fun moniker for this colorful southern dish eaten at celebrations. Corn tortilla chips work nicely with a zesty red wine vinaigrette-marinated corn, beans, tomatoes, and peppers!

INGREDIENTS

corn black-eyed peas jalapenos red onion cherry tomatoes red bell pepper yellow bell pepper cilantro

Wash and clean the cherry tomatoes, then cut them in half and quarters. Put them in a large bowl with room for the other vegetables and red wine dressing.

Next, chop the red onion, jalapeno pepper, and bell peppers. All of the ingredients should be diced into very small pieces and placed in a large bowl.

Now, open the black-eyed peas or black beans, drain the beans, and rinse very well. Add them to the large bowl.

If using canned corn, drain all of the juice from the can and rinse the corn well before adding it to the bowl.
