In a large pot pour in 1 gallon of apple cider, kosher salt, and honey.
Add in cinnamon sticks, cloves, and sliced fresh ginger.
Cut ribbons of orange peel. Slice the orange in half and squeeze the juice into the pot.
Slice up the red and green apples and add them to the pot. Bring the pot to a boil and stir well.
Remove the brine from the heat and allow the brine to cool to at least room temperature before placing it in the refrigerator.
Brine the turkey according to instructions.
Smoke the brined turkey!
